Its round taste respects the ones of the food it accompanies. Excellent for salads, fish and delicate dishes in general. Also suitable for pastry. Made with excellent varieties of regional olives. In the mix, the proportions vary according to the yearly harvesting. The varieties used encompasses “Ogliarola” and “Peranzana”. The different kinds of olives used are well-balanced, composing a bouquet boasting notes of tomato, hay, artichoke, and apple. Moderately fruity and herbaceous, it has a pleasant almondy flavour.
